This document shows a simulation of water being heated in a pan over a gas flame. The pan is made of iron and contains iron and water particles too small to see. As the gas flame heats the iron particles, they heat the water particles, causing them to shake and evaporate when hot enough. So applying heat to the pan via the fire causes the water particles to heat up and evaporate.
